Chocolate peanut butter banana French toast

For an energizing meal, serve this French toast cut up into fingers along with sliced fruit and a glass of milk.

Ingredients

  • 4 eggs
  • 250 mL (1 cup) milk
  • ½ ripe banana
  • 5 mL (1 tsp) vanilla
  • 8 slices of day-old whole-wheat bread
  • 20 mL (4 tsp) peanut butter
  • 20 mL (4 tsp) chocolate hazelnut spread

Directions

Using a blender or food processor, blend eggs, milk, banana and vanilla until smooth. Pour egg mixture into a 3.5-L (13 x 9-inch) baking dish. Soak bread in egg mixture, one slice at a time, for a few minutes. In a large nonstick skillet, cook each slice of bread over medium heat until done on both sides. Spread 5 mL (1 tsp) of peanut butter on each of 4 slices of French toast. Spread 5 mL (1 tsp) of chocolate hazelnut spread over each of the remaining 4 slices of French toast. Make sandwiches by combining one slice of peanut butter French toast with one slice of chocolate spread French toast. Cut into fingers and serve.
